JACK’S WIFE FREDA COPYCAT TUNA SALAD

 
 

Tuna Salad is the MOST underrated. 

2 servings, 10 minutes

Ingredients:

1 can tuna, in water or oil
1 tbsp good balsamic, That Balsamic is my fav!
1 tsp chili sauce or pepper flake, preferably Momofuku crunch
Salt
Pepper

Salad
1/2 cup cherry tomatoes, halved 
1 avocado
4 cups arugula

Some of my best friends love this salad at Jack’s Wife Freda, or the Tuna Salad sandwich from Daily Provisions, but every time you order a tuna salad in front of a new person, you wonder if they think you’re the weird kid on the block. Frankly, I’ve had whole conversations about how tuna salad is underrated. So here’s our case to prove it. There’s nothing more NYC than a good tuna salad on top of the perfect NYC bagel and a slide of tomato. It’s pretty typical for a tuna salad to have a mayo base. And don’t get me wrong, I love those tuna salads. But when I went to the ever famous Jack’s Wife Freda for the first time, you know your girl had to try their tuna. Don’t get me started on the fact that it’s served atop arugula, which if you know me, or follow me, follow Andrew, and/or follow my breakfasts that I make for us - you know arugula is a Blistered Peppers STAPLE - love, Love LOVE me some arugula. So the salad came and the tuna salad was vinegar based. YES! I had to give this a try. Emboldening the tuna itself with a simple balsamic mix really intrigued me. 

This recipe is simple. You can throw it on top of a salad like they do at JWF or spoon some on top of a crusty bread. Either way you’ll be pleased. I like to throw two cans of tuna into the mix at the beginning of the week so I’ve got a few days of meals ready to go. 

TUNA IN OIL OR WATER

This is really a toss up. Your choice depends on your mood. Looking to really pack in some new flavor and cut back on some calories? Reach for the tuna in water and drain the water REALLY well. Interested in a moist flavor packed tuna to add to an already dressed salad or simple sandwich? Grab the tuna in oil. All I recommend is that no matter the tuna make sure it’s high quality and safely caught.

Steps:

  1. Drain canned tuna then mix with balsamic, chili sauce or red pepper flake, salt and pepper. 

  2. Halve the cherry tomatoes. Peel the skin off the avocado, and cut into ¼ inch thick slices. 

  3. In a serving bowl, dress the arugula in olive oil and mix well. Top with cherry tomatoes, an avocado ‘fan’, and a heavy spoonful or two of the balsamic tuna. 

Sprinkle avocado with flakey sea salt and enjoy!
