The perfect meal replacement to grab and go. 

1 serving, 5 minutes

Ingredients:

Banana Spinach Smoothie:
3/4-1 cup coconut water, milk, or water
2 small bananas
1 cup spinach
1-2 dates
2 tbsp peanut or almond butter
Optional: 1 spoonful Vital Proteins unflavored; 1-2 tsps cocoa powder

Acai Smoothie:
1 cup coconut water
1 pack of acai
1 small banana
1 tbsp peanut butter
1/2 cup strawberries
Optional: 1 serving spoon Vital Proteins

Mango Smoothie:
2 cups coconut water or Oatly or blend of both - creamier with milk
2 cups mango
1 small banana or 1 cup strawberries
Optional: 1 serving spoon Vital Proteins, vanilla or unflavored

I’ve done a whole thing on “everything’s better in a tortilla.” Which is of course still true, but is there anything easier than a smoothie? Other than chopping the fruit or the veggie (and if you have a killer blender like my Vitamix sometimes you don’t even have to do that) there’s nothing you need to do! If you need a grab and go breakfast, lunch, or even dinner - a smoothie is the way to go. It helps you control what you’re putting into your body and you can walk or drive with it - no mess! These are some of my favorites, but you can play around with ingredients, which makes it even more fun. Can’t get past the taste of kale or spinach but want to consume them on the daily? Mix them in with a banana and you’ll know the difference. Actually, want your kid to eat a more balanced diet? BLEND THAT FRUIT OR VEGGIE INTO A SMOOTHIE and they’ll gobble it right up! 

What’s the key to the perfect smoothie? Other than the flavors you love, the balance of frozen and fresh is important to get the right consistency. You can always play with what you have on hand, but at least one of the fruits/veggies in the smoothie should be frozen. Something I always do when I’m on my weekly grocery run is grab some frozen berries, mango, or pineapple so I know if I’m in a pinch during the week I’ve got an easy make and go meal.

Steps:

  1. Add all the ingredients into the blender. Remember to start with the liquid first! Blend on low for 30ish seconds, then crank up to high speed and lower back down until smooth.
