Summer’s Favorite Drink

1 serving, 5 minutes

Ingredients:

Notoriously known as the 3-2-1 ratio:
3 ozs Proseco or Champagne (I like Veuve)
2 ozs Aperol
1 oz club soda

Optional: orange slice garnish

At this point should we all just jointly be calling this thing “The Spritz”? Is there any other spritz worthy of the name? I’ll say I thought that this drink was done, but then Covid happened. People started experimenting with cocktails at home again, and poof we’re back in business. Why? Because it is simple. 3 ingredients, no shaking, no crazy tricks… it is essentially fool proof. 

Not to mention that everyone and their mother (and Andrew and I) went to Italy this summer and Aperol’s PR team is happy as hell. Why? The Aperol Spritz originated in Italy (Padua, specifically) and so the cocktail is rampant in Italy. How does one describe the taste of Aperol? I’m not sure I can. On its own it's slightly sweet and simultaneously bitter with a bit more syrupy texture. Oftentimes when you close the bottle it’s hard to open the second time because the top is stickier than you want it to be - almost like grenadine. You’ll read that once opened Aperol should be stored in the fridge for 3 months. I straddle the line there. Sometimes you find it in my fridge, sometimes it’s in my liquor cabinet. Sometimes I may be drinking it a little after 3 months… is that so bad!? Anyways, you do you. 

This is an easy enough drink to make, but I recommend good quality club soda - Fever Tree makes great sparkling drinks that are a perfect match for cocktails - and your favorite CHILLED Prosecco or Champagne. People tend to bring Champagne to housewarmings, engagement parties, etc. so honestly, use what you got!

Let’s face it. This is always the cocktail of the summer. It also just looks like summer in a glass. I love it on a rooftop with a crisp salad, or by a pool with some fruit. Serve it up with my Brussels and Broccoli salad or even with some chips and guac.

Steps:

  1. Fill a large wine glass (I’m obsessed with these Burgundy glasses because they’re SO large) full of ice. Add the aperol, prosecco/champagne, and club soda. 

  2. Give it a good stir.

Garnish with an orange slice and enjoy every last drop!
