If this isn’t the perfect Summer dessert, I don’t know what is. The balance of tart, sweet, and cool is to die for.

These cookies are seriously so delicious and the puffed up texture truly, as well as the flavor (obviously) reminds me of a lemon poppy seed muffin. Cannot recommend enough!
